Quick and simple chips in a deliciously spiced tomato sauce. Popular street food in Kenya that's great as a snack or to serve as a side dish.

Ingredients
400goven chips*
1tablespoonvegetable oil
1teaspooncumin seeds
1red onionfinley diced
1clovegarlicminced
1teaspoongrated ginger
1teaspooncurry powder
1teaspoonpaprika
¼teaspoonturmeric
½teaspoonchilli flakesmore or less to taste
1teaspoonsalt
½teaspooncracked black pepper
3tablespoonstomato ketchup
1tablespoontomato purée
Lemon wedges
Sliced spring onions
Chopped fresh coriander
Instructions
Cook the chips as directed on the packet.
While the oven chips are cooking prepare the sauce.
Heat 1 tablespoon of olive oil in a pan over medium heat. Once hot add the red onion with a pinch of salt and cook until the onion is soft and translucent. Around 5 minutes.
Add the garlic and ginger and cook for 1 minute until aromatic.
Add the spices and stir to coat the onion cooking for a further 1 minute. Curry powder, paprika, turmeric, chilli flakes, salt and black pepper.
Add the tomato ketchup and tomato puree. Stir until everything is combined and continue to cook for 1 minute until the sauce is bubbling. Turn off the heat and leave the sauce in the pan until the chips are ready.
Once the chips are ready remove them from the oven and immediately add to the sauce in the pan. Carefully stir until all the chips are thoroughly coated, trying not to break too many chips.
Serve in a sharing dish with the spring onions and coriander sprinkled on top. Squeeze over the lemon wedges before eating.
Notes
It's best to use thicker cut chips for this recipe. However, making Masala Fries is also an option. You can also use deep-fried chips if you prefer.
