Ingredients
1tinchickpeas
1tinhearts of palm
3tablespoonsextra virgin olive oil
1mediumsweet onionthinly sliced
2clovesgarlicthinly sliced
2tablespoonschopped parsley
1tablespoonred wine vinegar
½teaspoonsalt
Instructions
Rinse and drain the chickpeas and hearts of palm.
Cut the hearts of palms into 1cm disks.
Heat a pan over medium heat, once hot add the olive oil with the onion, garlic, and pinch of salt. Sauté until the onions are soft, around 3 minutes.
Turn off the heat.
Add everything else to the pan, the chickpeas, hearts of palm, parsley, vinegar and salt.
