Vegan Orange Cake (Gâteau à l’orange)

Vegan Orange Cake (Gâteau à l’orange)

Ingredients
  

  • 325 g self-raising flour
  • 5 g bicarbonate of soda
  • 5 g baking powder
  • Pinch salt
  • 200 g caster sugar
  • 150 g vegan butter
  • 150 ml plant-based milk
  • 120 ml orange juice
  • 30 ml dark rum*
  • 2 tsp vanilla essence
  • Zest of 2 oranges

Orange Icing

  • 150 g icing sugar
  • 20 ml orange juice
  • 10 ml dark rum*

Instructions
 

  • Preheat an oven to 180°C and prepare a bunt or cake tin, using butter to grease all sides of the tin and coating in a thin layer of flour.
  • In a bowl add the plant-based milk and orange juice mix well and let sit for 5 minutes. This will cause the plant-based milk to split and become slightly thicker.
  • Meanwhile in a separate large bowl cream the butter and sugar together until light and fluffy.
  • Once the milk has sat for 5 minutes add the vanilla, dark rum and orange zest and mix well before adding to the butter mixture. Roughly fold in using a spatula before gradually adding the flour, bicarbonate soda, baking powder and salt. Combine well using a mixer or a spoon until smooth.
  • Transfer the mixture to the prepared tin, smooth out the top and bake in the centre of the preheated oven for 35 to 40 minutes or until a skewer comes out clean when inserted into the middle of the cake.
  • Leave to cool completely before removing from the tin and decorating.
  • Add icing sugar to a bowl then add in your rum then slowly add in the orange juice, mixing until at deserved consistency. You might not want to use all the liquid.
  • Pour the icing onto the cooled cake and decorate with orange zest.

Notes

If you don’t want to use alcohol, substitute the dark rum for more orange juice.
