Serving Brazilian White Rice
This simple rice side dish goes perfectly with our recipes for Vegan Feijoada (Brazilian Black Bean Stew) and Vegan Moqueca (Hearts of Palm Stew).
Brazilian White Rice
Jasmine rice cooked with onions and garlic for a wonderful savoury flavour. Perfect as a side dish for your favourite stew.
Ingredients
- 2 tablespoons vegetable oil
- 1 medium brown onion diced
- 4 cloves garlic minced
- 250 g Jasmine rice
- 500 ml hot water
Instructions
- Thoroughly wash the Jasmine rice until the water runs clear. Place in a bowl and cover with water. Let the rice soak while preparing the rest of the dish.
- Make sure you have access to boiling water from a kettle or a pan.
- Heat the oil in a large heavy-bottomed pan over medium heat. Once hot add the diced onions and gently saute until soft and translucent, around 6 minutes. Add the minced garlic and continue to sauté for a further minute.
- Drain the rice and add to the pan. Continue to cook, stirring continuously, for 1 minute.
- Add the hot water and bring to a rolling boil. Continue to boil with the pan uncovered for 8 minutes. Cover the pan and reduce the heat to the lowest setting on your stove. Moving to the smallest ring on your hob if needed.
- Continue to let the rice steam for 15 minutes. Check that the rice is cooked and all the water has been absorbed.
- Fluff up the rice and serve.
