Enhance Your Vegan Coronation Chickpeas with These Tips

  1. Adjust the Spice Level: Feel free to adjust the amount of curry powder according to your preference. If you prefer a milder flavour, reduce the amount of curry powder or if you want something punchier consider adding a dash or two of hot sauce.
  2. Creaminess Factor: Achieve the desired creaminess by adjusting the amount of vegan mayonnaise in the recipe. Add more for a creamier texture, or less if you prefer a lighter consistency.
  3. Make-Ahead Convenience: These coronation chickpeas can be made in advance and stored in an airtight container in the refrigerator for up to three days. This makes them perfect for meal prep or quick lunches during the week.
  4. Flavour Infusion: Allow the flavours to merge together by letting the chickpea mixture sit in the refrigerator for at least 30 minutes before serving. This allows the spices to fully infuse into the vegan mayonnaise, enhancing the overall taste.
  5. Serve with Complementary Ingredients: When serving as a sandwich filling, consider pairing it with fresh greens like lettuce or watercress, sliced tomatoes, and hearty bread like whole grain or ciabatta for a well-rounded meal.
  6. Garnish for Visual Appeal: Before serving, garnish the coronation chickpeas with a sprinkle of fresh chives or parsley for a pop of colour and added freshness.
  7. Experiment with Serving Ideas: Get creative with how you enjoy your coronation chickpeas! Aside from sandwiches, baked potatoes, and salads, consider using them as a topping for rice bowls, filling for wraps or tacos, or even as a dip for veggie sticks or crackers.
  8. Change the Protein: For a twist on the classic recipe, consider swapping out chickpeas for a different plant-based protein like tempeh, tofu, or vegan chicken pieces. These will require cooking.
