Vegan Bacalhau com Grão – Hearts of Palm and Chickpea Salad
Ingredients
- 1 tin chickpeas
- 1 tin hearts of palm
- 3 tablespoons extra virgin olive oil
- 1 medium sweet onion thinly sliced
- 2 cloves garlic thinly sliced
- 2 tablespoons chopped parsley
- 1 tablespoon red wine vinegar
- ½ teaspoon salt
Instructions
- Rinse and drain the chickpeas and hearts of palm.
- Cut the hearts of palms into 1cm disks.
- Heat a pan over medium heat, once hot add the olive oil with the onion, garlic, and pinch of salt. Sauté until the onions are soft, around 3 minutes.
- Turn off the heat.
- Add everything else to the pan, the chickpeas, hearts of palm, parsley, vinegar and salt.
- Mix well then taste and adjust the seasoning.
- Leave to stand for 5 minutes.
- Mix again before serving at room temperature.
