Brazilian White Rice

Brazilian White Rice

Jasmine rice cooked with onions and garlic for a wonderful savoury flavour. Perfect as a side dish for your favourite stew.

  • 2 tablespoons vegetable oil
  • 1 medium brown onion diced
  • 4 cloves garlic minced
  • 250 g Jasmine rice
  • 500 ml hot water


  • Thoroughly wash the Jasmine rice until the water runs clear. Place in a bowl and cover with water. Let the rice soak while preparing the rest of the dish.
  • Make sure you have access to boiling water from a kettle or a pan.
  • Heat the oil in a large heavy-bottomed pan over medium heat. Once hot add the diced onions and gently saute until soft and translucent, around 6 minutes. Add the minced garlic and continue to sauté for a further minute.
  • Drain the rice and add to the pan. Continue to cook, stirring continuously, for 1 minute.
  • Add the hot water and bring to a rolling boil. Continue to boil with the pan uncovered for 8 minutes. Cover the pan and reduce the heat to the lowest setting on your stove. Moving to the smallest ring on your hob if needed.
  • Continue to let the rice steam for 15 minutes. Check that the rice is cooked and all the water has been absorbed.
  • Fluff up the rice and serve.
